FamilyFun Holiday Challenge: Day 23 Chocolate Chip-Pumpkin Loaf


We made a Chocolate Chip-Pumpkin Loaf and shared slices of it on our neighbor gift goody plates along with Festive Fudge and Rudolph and Friends S'more Cupcakes.  The kids each had a slice and saved the heals for Santa.


This quick bread was delicious.  It reminded me of Pumpkin Chocolate Chip Cookies.  I am not always a big fan of nuts inside my breads, but I really didn't mind the walnuts in this recipe.  If you don't like nuts or have a nut allergy you could always replace the nuts with more chocolate chips.  Who doesn't want a little more chocolate in their life? Here is how I made the recipe from FamilyFun.


Chocolate Chip-Pumpkin Loaf


1/2 cup (1 cube) unsalted butter
1 1/4 cups sugar
3 large eggs
1 tsp vanilla
1 CUP canned pumpkin (not pumpkin pie filling)
1 3/4 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/3 cup milk
3/4 cup chocolate chips
3/4 cup walnuts


Spray a 9- by 5-inch loaf pan with nonstick cooking spray. Preheat the oven to 350 degrees F.


Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla and pumpkin.


In a medium sized bowl, mix together flour, baking soda, baking powder, salt, and spices.


Blend a third of the flour mixture into the butter mixture. Then add 1/2 of the milk. Slowly add more flour mixture and milk, alternating between the two, and making sure to blend each addition thoroughly. Fold in chocolate chips and walnuts.


Pour batter into greased pan. Bake on the center rack of the oven about 50-60 minutes, or until toothpick inserted into the center comes out clean (with the exception of melted chocolate).


Remove the pan from the oven and place on a cooling rack for 15 minutes. Then invert pan onto cooling rack to remove bread and allow bread to cool.

FamilyFun's Chocolate Chip-Pumpkin Bread recipe will be a new regular fall/winter recipe at our house. I looked forward to playing with different varieties of chips, nuts, and raisins in the future.  I am thinking cinnamon chips might be yummy or dark chocolate chips and craisins. We give this 5 fingers.
